L'Hostellerie le Castellas, demeure du XVIIéme, est située dans une petite rue, au cœur du village de Collias. Tirant admirablement parti de la disposition des maisons, Mme Aparis a réussi à faire de la cour fermée un oasis de verdure, un jardin à la Monet, à cacher en contrebas une petite piscine style de bain Romain où il fait bon se reposer ou y lire sur une chaise longue. Lieu d'expression privilégié pour les artistes, peintres, sculpteurs... Et pourquoi pas trouver l'inspiration de l'écriture devant un bon verre de vin de notre région. Une terrasse intérieure où l'on déjeune sous les glycines, et le soir, au jardin où l'on dîne, on pourra savourer la cuisine de notre Chef Jérôme Nutile, pleine de couleurs, de saveurs et de parfums. La terrasse en soirée est illuminée par des lumières tamisées. Vous y trouverez son fer forgé, ses tissus provençaux, ses palmiers, ses murs de vieilles pierres où court une vigne vierge et touffue. Chaque chambre possède un style artistique différent.
